Lentil Soup Recipe

Serves/Makes: 8
Ingredients:
2 cups lentils (French green lentils have excellent flavor)
4 cups water
8 cups vegetable broth
1 onion, diced
3 stalks celery, sliced
2 carrots, chopped
2 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon oregano
1 can (14-ounce size) diced tomatoes
2 tablespoons red wine vinegar
Directions:
Stir together all ingredients in a crock pot. Cook on low for 8 to 10 hours.
