Morning Glory Muffins

Morning Glory Muffins
From the Kitchen of Margot Bass

2 1/2 cups sugar
4 cups flour
4 teaspoons cinnamon
4 teaspoons baking soda
1 teaspoon salt
(sift together)
1 cup of raisins
1 cup shredded coconut
4 cups shredded carrots
2 cups diced or shredded apples
1 cup pecans (optional)
6 eggs
(add to dry ingredients)
2 cups vegetable oil
1 teaspoon vanilla
(add to mixture)


Bake @ 375 for 20 minutes
Makes 36 muffins
These are amazing! So filling with all the yumminess inside :)
