Chicken Spinach Salad

A simple lunch or dinner

Chicken Spinach Salad

serves: 2
prep time: 5 minutes
cook time: 8 minutes
items you'll need: skillet, salad bowl

1 chicken breast (cubed)
2-3 cups of baby spinach
1/4 cup sliced almonds
1/4 cup feta
1/2 cup craisins
1 tbsp extra virgin olive oil
1 tsp lemon juice
salt and pepper to taste
Brienna's Blush Wine Vinaigrette Dressing

1. Cook chicken in olive oil, lemon juice, salt and pepper
2. Place spinach in bowl with almonds, feta, and craisins
3. Add warm chicken and dressing
4. Toss and serve
