Peach Salad

preheat oven: 350
prep time: 7 minutes
items you'll need: baking sheet, salad bowl
1 bag of baby spinach, rinsed & dried (4 cups)
2 peaches
3/4 cup pecans
1/4 cup poppyseed salad dressing
1. Arrange pecans on a single layer baking sheet and roast in oven for 7-10 min (until they just begin
to darken)
2. Slice peaches into bite size segments
3. Combine peaches, spinach and pecans in a large bowl
4. Toss with dressing until evenly coated
